What You Will Need

  • 3 lb purple (Okinawan or Stokes) sweet potatoes, peeled and cubed
  • 8 oz Yancey's Fancy Ube Gouda, shredded and divided
  • 4 tbsp unsalted butter
  • 1/4 cup heavy cream
  • 2 tbsp light brown sugar
  • 1 tsp vanilla extract
  • 3/4 tsp kosher salt
  • 1/4 tsp ground cinnamon
  • 1/2 cup all-purpose flour (streusel)
  • 1/4 cup light brown sugar (streusel)
  • 4 tbsp cold unsalted butter, cubed (streusel)
  • 3/4 cup pecans, chopped (streusel)
  • 1 pinch kosher salt (streusel)

What To Do

  1. Boil the Sweet Potatoes: Place the cubed purple sweet potatoes in a large pot of salted water. Boil until fork-tender, then drain well.
  2. Preheat and Prep: Preheat the oven to 350°F and butter a 9x13-inch baking dish.
  3. Mash the Base: Mash the hot sweet potatoes with the butter, heavy cream, brown sugar, vanilla, salt and cinnamon until smooth.
  4. Melt in Half the Gouda: While the mash is still hot, stir in half of the Yancey's Fancy Ube Gouda until melted. Reserve the rest for the topping.
  5. Make the Streusel: Whisk the flour, brown sugar and salt, cut in the cold butter until crumbly, then stir in the chopped pecans.
  6. Assemble: Spread the mash in the baking dish, top with the remaining gouda, then scatter the streusel over the top.
  7. Bake: Bake until the streusel is deeply golden and the gouda is melted and glossy.
  8. Rest and Serve: Let the casserole rest for a few minutes before serving warm.

Pro Tips:

Okinawan or Stokes purple sweet potatoes give the deepest color; orange sweet potatoes work too, with less drama. The mash and streusel can be made a day ahead and refrigerated separately. Assemble and bake, adding about 10 extra minutes.
