2 cups sweet potatoes and 2 cups Yukon gold potatoes, diced
2 cups Yukon gold potatoes, diced
1 bell pepper and 1 red onion, diced
7.6 oz. Yancey's Fancy Steakhouse Onion Cheddar (shredded)
4 large eggs
2 tbsp olive oil
What To Do
1. Sauté: Heat oil in a large skillet. Add potatoes and cook until tender and browned (about 12–15 minutes).
2. Veggies: Add bell pepper and onion; cook until softened.
3. Melt: Sprinkle the Steakhouse Onion Cheddar over the hash and cover with a lid for 2 minutes to melt.
4. Serve: Divide the hash into bowls and top each with a freshly poached egg.
