Smoked Gouda & Sharp Cheddar Scalloped Potato Gratin
Silky Smoke, Sharp Tang, Golden Top
Thin-sliced potatoes baked in cream with Yancey's Fancy Smoked Gouda and New York Sharp Cheddar, two cheeses chosen specifically for how they melt: the gouda goes silky and smoky, the sharp cheddar adds tang and a golden, crackled top.

Total Time: 2 hours
Serves: 10
What You Will Need
- 3 lb russet potatoes, peeled and thinly sliced (1/8 inch)
- 6 oz Yancey's Fancy Smoked Gouda, shredded
- 6 oz Yancey's Fancy New York Sharp Cheddar, shredded
- 2 cups heavy cream
- 1 cup whole milk
- 3 garlic cloves, smashed
- 2 fresh thyme sprigs
- 1/8 tsp ground nutmeg
- 2 tbsp unsalted butter, softened, for the dish
- 1 tsp kosher salt
- 1/2 tsp black pepper
What To Do
- Beat the Base: In a large bowl, beat the softened cream cheese until smooth and fluffy, 1 to 2 minutes with a hand mixer or sturdy spoon.
- Fold in the Cheddar and Flavorings: Fold in the finely shredded Roasted Garlic Cheddar, sour cream, chives, Worcestershire sauce, and kosher salt until evenly combined. The roasted garlic cheddar should be distributed throughout, not clumped.
- Chill to Firm Up: Scrape the mixture onto a large sheet of plastic wrap, gather into a rough ball, and refrigerate until firm enough to shape.
- Shape and Coat: Unwrap and shape firmly into a smooth ball with your hands. On a plate, mix the toasted pecans and parsley, then roll the ball in the mixture, pressing gently so it adheres on all sides.
- Chill Again and Serve: Wrap and refrigerate until ready to serve for best slicing texture. Set out with crackers about 15 minutes before serving so it softens slightly.
Pro Tips:
Slice potatoes on a mandoline for even layers and even melting. Can be assembled a day ahead and refrigerated unbaked. Add 10 to 15 minutes to the covered bake time if starting cold.
