4 cups mixed baby greens or arugula
2 thick slices sourdough or artisanal bread
1 ripe avocado, mashed
7.6 oz. Yancey's Fancy Champagne Cheddar (shredded or sliced)
2 large eggs (poached or soft-boiled)
Lemon vinaigrette and red pepper flakes

What To Do

1. Toast the bread until golden and firm.
