Maple Bacon Cheddar & Sage Stuffed Turkey Breast Roulade
Sweet-Salty Spiral, Juicy Turkey, Holiday Showstopper
A boneless turkey breast is pounded flat, layered with Yancey's Fancy Maple Bacon Cheddar and fresh sage, then rolled and roasted so every slice reveals a melted, sweet-salty spiral running through the meat.
Prep Time: 30 min
Cook Time: 1 hr 15 min
Total Time: About 2 hours
Serves: 8
What You Will Need
- 3 lb boneless, skin-on turkey breast, butterflied
- 6 oz Yancey's Fancy Maple Bacon Cheddar, shredded
- 2 tbsp fresh sage, chopped
- 1 tsp fresh thyme leaves
- 4 cooked bacon strips, crumbled
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp unsalted butter, softened
- 1/2 cup chicken broth
- Kitchen twine, for tying
What To Do
- Pound the turkey flat: Lay the butterflied turkey breast skin-side down between sheets of plastic wrap and pound to an even 1/2-inch thickness. Season the inside with 1 tsp kosher salt and 1/2 tsp black pepper.
- Layer the filling: Scatter the shredded Maple Bacon Cheddar, chopped sage, thyme leaves, and crumbled bacon evenly over the flattened turkey, leaving a 1-inch border on one short end to help it seal.
- Roll and tie: Starting from the filled end, roll the turkey breast tightly into a log, skin-side out. Tie securely at 1 1/2-inch intervals with kitchen twine so the cheese stays sealed in while it melts.
- Preheat and sear: Preheat the oven to 375°F. Rub the roulade with the olive oil and softened butter, season the outside with the remaining salt and pepper, then sear on all sides in a large oven-safe skillet over medium-high heat until golden.
- Roast to temperature: Pour the chicken broth into the skillet around the roulade. Transfer to the oven and roast until a thermometer inserted into the center reads 165°F.
- Rest before slicing: Transfer to a cutting board and let rest, tented with foil, so the juices (and melted cheese) redistribute instead of spilling out.
- Slice and serve: Snip away the twine and slice into 3/4-inch rounds to reveal the melted cheese spiral. Spoon the pan drippings over top as a quick sauce.
Pro Tips:
Roast timing varies with thickness, so start checking the temperature at the 40-minute mark. This roulade also makes an elegant alternative main for guests who want a smaller portion than a whole turkey.
