Total time: 35 minutes
Yield: 1 Family-Sized Pan (Feeds 6–8) OR 2 "Small Batch" Dinners

Ingredients - What You Need

1 Wedge (7.6 oz) Yancey’s Fancy Buffalo Wing Sauce Cheddar
1 Wedge (7.6 oz) Yancey’s Fancy Roasted Garlic Cheddar
1 Wedge (7.6 oz) Yancey’s Fancy Champagne Cheddar
1 Wedge (7.6 oz) Yancey’s Fancy Smoked Gouda
1 lb pasta - Cavatappi or Fusilli or Rotini
4 Tbs unsalted butter
4 Tbs plain flour
2 Cups warmed milk
Crushed pretzels or panko (Optional)

Instructions - What To Do

1. The Prep: Grate the Buffalo Wing, 1/2 of the Smoked Gouda, and 1/2 of the Roasted Garlic. Separately, cube 1/2 of the Champagne Cheddar into 1/4-inch pieces and set aside in the fridge to stay cold.
2. The Pasta: Boil 1 lb of ridged pasta in salted water until just under al dente. Drain and set aside.
3. The Velvety Roux: Melt 4 tbsp butter in a large skillet or pot. Whisk in 4 tbsp flour for 60 seconds. Slowly whisk in your warmed milk until the sauce is thick and smooth and can coat the back of a spoon.
4. The Emulsion: Turn heat to Low. Whisk in your grated cheeses (Buffalo, Gouda, Garlic) one handful at a time. The Gouda will act as the "stabilizer," keeping the Buffalo oils perfectly integrated.
5. The Fold: Toss the cooked pasta into the sauce. Once fully coated, gently fold in your cold Champagne Cheddar cubes.
6. The Finish (Optional): Transfer to a baking dish, top with crushed pretzels or panko, and broil for 3–5 minutes until the top is bubbling.

Pro Tips:

1. Small-Batch Strategy (Feeding 6 or Less?): If you only need a side dish or a meal for two, use 1/2 lb of pasta and half of each wedge. Since these are artisan wedges, they stay fresh! Use the remaining half-wedges to build a "Buffalo Burger" or a "Garlic-Gouda Grilled Cheese" later in the week.
2. The Crunch: Skip the breadcrumbs! Use Crushed Pretzels for the topping. The salt and crunch mimic the experience of a pretzel dipped in beer cheese.
3. The Sip: Pair with a Hop-Heavy IPA to accentuate the spice, or a Classic Game-Day Cider to provide a sweet, crisp contrast to the buffalo heat.
4. The Pro Move: Drizzle a little extra buffalo sauce and sprinkle fresh blue cheese crumbles over the top just before serving to hit all the "Buffalo Wing" notes.
