What You Will Need

3 large sweet potatoes, sliced into 1/4-inch rounds
2 tbsp olive oil
7.6 oz. Yancey's Fancy Smoked Gouda with Bacon (shredded)
1/2 cup black beans, rinsed
Toppings: Sliced jalapeños, avocado, and sour cream

What To Do

1. Roast the "chips": Preheat oven to 400°F. Toss sweet potato slices with olive oil and spread in a single layer on a baking sheet. Bake for 20 minutes, flipping halfway through.
2. Layer: Once crispy, pile the slices together. Top with black beans and a heavy layer of Smoked Gouda with Bacon.
3. Melt: Return to the oven for 5 minutes until the cheese is bubbling and smoky.
