Instructions - What To Do
1. The Blend: Coarsely grate the XXX Sharp Yellow Cheddar (for the bite), the Maple & Bacon (for the smoke), and the Jalapeño & Piquante (for the snap). Combine them into one "Sweet-Heat" blend.
2. The Layering: In a hot skillet, place your tortilla. Lay down a foundational layer of the cheese blend. Add the warm BBQ meat, red onions, and cilantro. Top with one final sprinkle of cheese to lock the ingredients in place.
3. The Low-and-Slow: Butter the outside of the tortilla lightly. Grill over medium-low heat—the XXX Sharp takes a moment longer to melt perfectly, so low and slow is the secret here.
4. The Ooze: Once the Jalapeño & Piquante starts to ooze from the sides, flip and cook until the other side is crispy.
5. The Finish: Cut into quarters and serve with your chosen BBQ fruit-jam or chipotle sauce.
