1 Wedge (7.6 oz) Yancey’s Fancy Jalapeño & Piquante Cheddar
1 Stick (8 oz) Yancey’s Fancy Grand Reserve XXX Sharp Yellow Cheddar
4 Large flour tortillas (or corn tortillas for a more traditional BBQ feel)
2 cups Pulled Pork or Smoked Beef Brisket (warm)
¼ cup thinly sliced red onion
2 tablespoons fresh chopped cilantro
1 Tsp Butter
Honey-Chipotle BBQ sauce or a Peach-Habanero jam

Instructions - What To Do

1. The Blend: Coarsely grate the XXX Sharp Yellow Cheddar (for the bite), the Maple & Bacon (for the smoke), and the Jalapeño & Piquante (for the snap). Combine them into one "Sweet-Heat" blend.
