1. Grill Pineapple: Sear pineapple slices on a hot grill or grill pan until marks appear; chop into small pieces.
2. Assemble: Layer cheese, chicken, and grilled pineapple on one half of each tortilla.
3. Cook: Fold tortillas in half and cook in a dry skillet over medium heat for 3 minutes per side until the cheese is molten.
4. Serve: Cut into wedges and serve with fresh cilantro and a squeeze of lime.
