What You Will Need

2 large heads cauliflower, cut into bite-sized florets
1/2 cup heavy cream
4 oz. cream cheese, softened
7.6 oz. Yancey's Fancy Roasted Garlic Cheddar (shredded)
1/2 tsp dry mustard and salt/pepper to taste

What To Do

1. Steam or boil the cauliflower florets until tender (about 5-7 minutes); drain very well.
2. Make the sauce: In a large saucepan, simmer heavy cream and cream cheese until smooth.
3. Whisk in the Roasted Garlic Cheddar and dry mustard until the sauce is thick and glossy.
4. Combine: Fold the cauliflower into the cheese sauce until every floret is coated.
5. Bake (optional): Transfer to a dish and bake at 375°F for 10 minutes for a bubbly, golden top.
