What You Will Need

4 large flour tortillas
6 large eggs, scrambled
1/2 lb. breakfast sausage or bacon, cooked
7.6 oz. Yancey's Fancy Jalapeño & Peppadew Cheddar (shredded)
2 green onions, sliced

What To Do

1. Prepare the filling: Scramble the eggs in a skillet until just set; set aside.
2. Assemble: Lay a tortilla in a dry skillet over medium heat. Sprinkle a layer of Jalapeño Peppadew Cheddar on one half.
3. Layer: Add scrambled eggs, cooked sausage or bacon, and green onions. Top with another layer of cheese.
4. Crisp: Fold the tortilla in half. Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is fully melted.
5. Serve: Slice into wedges and serve with salsa or hot sauce.
