What You Will Need

7 cups King Arthur Flour
1 ½ tbsp yeast & 1 ½ tbsp kosher salt
2 tbsp cinnamon, 1 tsp cardamom, 1 tsp allspice
3 cups warm water
3 ¼ cups shredded Yancey's Fancy Apple Pie Cheddar Cheese (divided)
3 tbsp unsalted butter, melted

What To Do

1. Mix: Combine flour, yeast, salt, spices, and 2 ½ cups of shredded cheese in a large mixing bowl.
2. Incorporate: Add warm water and mix until combined. Place dough in a covered container and let rest at room temperature for 4 hours, then refrigerate overnight.
3. Shape: Divide dough into equal portions and place in greased 6-inch cake pans. Let rest for 2 hours at room temperature.
4. Topping: Brush with melted butter and sprinkle the remaining ¾ cup of cheese on top.
5. Bake: Preheat oven to 375°F. Bake for 80 minutes (do not open the oven door for the first hour).
