6 slices Brioche bread, cubed (or your favorite bread)
1 lb cubed ham (cooked, drained and crumbled bacon or sausage may also be used if desired)
¾ cup chopped green onion, divided
2 cups shredded Yancey’s Fancy™ Maple and Bacon Cheddar Cheese
6 eggs
2 cups milk
1 tsp kosher salt
½ tsp black pepper
WHAT TO DO
Lightly grease a 11X7 baking dish with cooking spray
Arrange bread cubes in a single layer in the prepared baking pan. Sprinkle bacon and ½ cup green onion evenly over the bread followed by the cheese
Whisk together eggs, milk, mustard, salt and pepper in a medium bowl. Pour over the bread mixture. Cover and refrigerate for at least 8 hours or overnight. Remove strata from the refrigerator and let sit at room temperature for 30 to 60 minutes before baking
Preheat the oven to 350°F
Bake until a knife inserted in the center comes out clean, 50-60 minutes. Remove from the oven, sprinkle with remaining ¼ green onion, and allow to cool 5 minutes before serving.
